An easy traditional recipe that you can try your hand at at home!

Tamplùn are traditional chestnut-flour pastries typical of the Ferrara's culinary tradition. They are an autumn dessert ideal for warming up in the cold months and to get the energy to face the winter!

In contrast to castagnaccio, whose batter is liquid and then baked in the oven, tamplùn are made from a less liquid batter that must be fried in plenty of oil.

Ingredienti

250 g chestnut flour 
2 tablespoons sugar
1 tablespoon baking powder 
A handful of raisins (optional) 

Lemon peel (optional) 
Water or milk to taste
Oil for frying
Powdered sugar to taste

Procedure

Traditionally, tamplùn can be prepared either plain, without 'fillings,' or with raisins. In case you want to test those with raisins, the first thing to do will be to soak them in warm water. If you even feel like further enriching the flavor of the pancakes, you could add a few tablespoons of cognac or liqueur to taste to the water. 

We are now ready to prepare the dough: sift the chestnut flour into a bowl, add the baking powder and sugar, then gradually add the water or milk (or a mixture of both) until it reaches the consistency of a smooth and somewhat thick mixture, with the consistency of a good spoon cake. Add the lemon zest and raisins to the mixture, then mix well. 

Meanwhile, heat plenty of frying oil in a not-too-large saucepan with high edges. 

Once the temperature suitable for frying is reached, gently lower a teaspoon of the mixture into the oil. We recommend helping yourself with another spoon, creating evenly sized balls. 

Fry the balls for 2-3 minutes, turning occasionally to prevent them from burning on one side. 

Remove from the oil once golden brown and pat dry on paper towels, then repeat until the mixture runs out. 

Finally, sprinkle the tamplùn with powdered sugar. We recommend enjoying the pancakes warm or cold, also to preserve your palate from typical burns!
