The perfect recipe when you want a simple but tasty cake, to make your kitchen smell delicious.

Perfect as breakfast,  snack or dessert, the brazadela (doughnut) is a classic of Ferrara home cooking. You can eat it alone or dunked in tea, milk or even in wine!
Brazadela has been prepared in Ferrara since 1250. It was the dessert of special occasions, especially Easter, because it was substantial even though prepared with common ingredients.
It seems that its name derives from the Italian word 'braccio' (arm). While serving food, the innkeeper used to carry it on one arm and the food on the other one. An excellent recipe to take your first steps in Ferrara's culinary tradition!

InFerrara's recipe

Traditional is…every family having its own recipe! This is ours.

Ingredients

1 kg flour
4 eggs
350 g sugar
150 g butter
100 ml milk (a little more or less depending on the flour's absorption capacity)

Brewer's yeast
Lemon peel
Granulated sugar

Procedure

Start preparing the brazadela by beating the eggs and sugar with a mixer. Then add the soft butter, egg and lemon zest. Now, very carefully, add the milk until you obtain a compact but workable dough. Transfer the mixture to a lightly floured pastry board and give the dough a cylindrical shape. Then place the dough inside a doughnut mould, brush with egg and sprinkle with sugar grains. 
Bake at 170° for about 40 minutes, until the surface of the brazadela is golden brown and a heady scent pervades your kitchen.
