Zia ferrarese | Salame all'aglio
Salami, what a great product! Good and tasty, practically every city has its own. The concept is always the same: seasoned and more or less aged meat.
In Ferrara, if you talk about having a sandwich with the “zia” literally translated as “aunt”, you are not talking about having a nice family moment, but instead enjoying a sandwich with our typical salami: zia “aunt” ferrarese.
This sausage has ancient origins and was already mentioned by some Renaissance sources, as many of the
typical recipes of our city.
Zia Ferrarese is made with a mixture of pig meat, seasoned with salt, pepper and - here is the real treat - plenty of fresh garlic, everything left to macerate in white wine.
Once the meat mixture is ready, it is put into a particular casing, much wider than normal one, called “zia”, from which the salami name comes from. The salami is then put to mature for 5 or 6 months in a cool, damp cellar.
